Fresh or mature coffee leaves are brewed in water, strained cleanly, then combined with fresh cow's milk. Household versions may be plain, sweetened, or spiced.
Engere
Boil or simmer the leaves for 7-15 minutes. Strain fully. Add milk while the brew is hot. Serve hot.
Sweetened Engere adds honey or sugar. Spiced Engere may include herbs and spices such as rue, coriander, ginger, basil, lemongrass, chilli, cardamom, fennel, and salt.
