A 2025 study optimized coffee leaf tea across a narrow temperature and time range, then compared green, oolong, and black-style leaf teas.

Aroma work on coffee leaves found that fermented samples showed more sweet and fruity notes, while non-fermented samples were more green and vegetable-like.
