What Buna does when cooking begins
Most leaves added to a dish are passive. They contribute what they carry — aroma, colour, mild nutrition — and leave the dish as they found it. Coffee leaf is different. It carries compounds that are chemically active. Chlorogenic acids. Mangiferin. Tannins. Amino acids. These interact. They respond. They change what they enter.
Understanding that response, element by element, is where the culinary work begins.
Moves the cup toward food. Draws moisture from fresh leaf. Rounds green edges and supports savoury perception. A brine made from strong leaf tea seasons from the outside in. Salt is the first intervention worth understanding.
Binds phenolics. Carries volatile aromatics differently than water does. A sauté in oil changes the leaf's character entirely. Fat can moderate what might otherwise be too intense, while keeping what matters.
At low concentration, brightens and balances. At high concentration, competes with the leaf and wins. Lime, tamarind, fermented cultures — each introduces acid differently. Needs care and a light hand.
Dry heat roasts. Wet heat extracts. Steam wilts without destroying. High heat for too long erases character. The leaf responds differently to each form of heat, and the difference is worth knowing before combining them.

How the leaf can be used
The leaf gives what it holds into a liquid. It is then discarded. What you keep is the brew. This is the most documented mode — four living traditions in this library demonstrate it, and the preparations section develops it further for the table.
The cooking liquid itself becomes the ingredient. Used instead of water in a broth, a grain preparation, or a sauce base, the extract works underneath the dish without announcing itself.
The leaf stays. It is prepared, cooked, and eaten. Every serious cooking culture has a grammar for this. Leaves are wilted, salted, sautéed, braised, dried, and powdered. The techniques are universal. What is being tested here is how coffee leaf behaves through each of them.
Young leaves suit brief, gentle preparation. Mature leaves need more. Both have a different character on the plate. Neither has been fully explored in a culinary context.
The leaf does not appear on the plate. It works underneath. It changes the dish it enters without declaring itself. This is the category that anchovy, dried mushroom, soy sauce, miso, and fish sauce occupy. Not the subject of the dish. The reason the dish tastes the way it does.
Coffee leaf has the chemistry for this. Concentrated phenolics and amino acids interact with whatever they enter. A dried leaf powder in a spice blend. A reduced decoction used to finish a sauce. A marinade built on strong leaf tea. The leaf disappears. The dish remains, changed.
This mode is the least charted and the most interesting. It needs the most kitchen time to understand.
