Words
Use
Tasting words are handles, not rules.
Acidity
Use local memory: nimbu, mosambi, raw mango, tamarind, kokum, amla, grape, apple. Then ask: pleasant, harsh, or dull?
Sweetness
Think ripe fruit, jaggery, dates, honey, caramel, sweet grain. Coffee sweetness is usually soft.
Texture
Thin is light. Round is smooth. Creamy is soft and coating. Dry is a rough feeling after swallowing.
Adjustment
Sour: finer, hotter, or longer. Bitter or dry: coarser, cooler, or shorter. Change one thing.
