Chandragiri Arabica grown beneath mature rubber canopy at approximately 130 m elevation in Karavaloor, Kerala. A lowland, shade-grown, warm-climate leaf. These six questions were developed specifically for this leaf and this context. They may need adjustment for highland or sun-grown material.
Most agricultural systems begin with a process. Citane begins with a question. A leaf that is understood can be processed with purpose. A leaf that is not understood is processed by assumption.
This framework was developed at Thumpassery Estate as a practical method for understanding coffee leaves before processing. It is not borrowed from tea. It is not borrowed from coffee roasting. It emerged from repeated observation of coffee leaves as their own material.
Age determines potential. Flush, young, intermediate, mature, and old leaves are not simply different sizes of the same material. They represent different chemical and structural states. Younger leaves generally contain higher concentrations of certain bioactive compounds and possess more delicate structure. Mature leaves tend to withstand handling and heat more effectively. Without age, there is no context.

A leaf produced during a wet season is not identical to one produced during a dry period. Before processing begins, the environment has already shaped the leaf.

In tea, the ideal harvest is often defined before processing begins. In coffee roasting, the green bean arrives as a largely fixed material. Buna occupies a different position.
The leaf remains open to multiple futures. The leaf and the process influence one another. The harvest and the intention are negotiated together.
